Nights in Bangalore Curry Lentil Soup

I’m keeping my promise never to complain about cold weather again, but that doesn’t mean a girl can’t attempt to warm herself up.  When I read Alicia at Posy Gets Cozy post about this Curry Lentil soup, the thought lingered in my head.  But instead of, like, going and looking up the recipe for that one, I made my own spin-off.  It was really easy.  Now, I imagine that soup may be more flavorful with all the wonderful ingredients, but I was totally craving coconut, and my recipe has a nice, mild, but warming quality.

Now, you’re probably going to notice that my recipes are, um…inexact.  I guess that’s because, to me, cooking need not be that mysterious.  Unless we’re talking about baking or souffles, most of the time, it seems to me, you can play with the proportions and use your common sense.  Plus, I never remember how much of everything and make many things up on the fly.  You’ll forgive me, won’t you?

Also, I’ve decided to name all my recipes dramatic things that conjure up vignettes related to their places of origin.  Silly? Perhaps.  Is it because I live in the suburbs and don’t get out much?  Definitely.  But nonetheless fun, no?

What you’ll need to whip up this soup is:

  • lentils
  • a can of coconut milk (not juice, you can make coconut milk at home by blending fresh coconut with water and straining with a cheesecloth, if you prefer)
  • curry powder
  • salt and pepper to taste

Boil your lentils in water and drain them.  Add the coconut milk and spices to taste, and simmer.  If you want you can blend this or mash the lentils up a bit.  I think this would be great with some salty sauteed onions or some cilantro for garnish.  Pair it with some good bread, tuck in for the evening in front of the fire, and dream of warmer climes.
